📐 Recipe Scaling Tips
Salt & spices: When doubling, start with 1.5× the salt and spices — taste and adjust. They don’t always scale linearly!
Eggs are tricky: For 1.5× recipes, use 1 whole egg + 1 yolk instead of 1.5 eggs. For 3× use 2 eggs + 1 yolk.
Baking time changes: Larger batches take longer. Check doneness 10-15 minutes before the original time when scaling up.
Pan size matters: When doubling, use a larger pan — don’t just fill the same pan twice as high. Use our Cake Pan Converter!
