Ingredients
  

Muffin Base

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 Large egg
  • ½ cup milk
  • ¼ cup unsalted butter
  • 1 tsp vanilla extract
  • 1 cup chopped apples

Streusel Topping

  • ½ cup all-purpose flour
  • ¼ cup light brown sugar
  • ¼ tsp ground cinnamon
  • ¼ cup unsalted butter

Instructions
 

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
  • Whisk together flour, sugar, baking powder, cinnamon, and salt in a large bowl
  • In a medium bowl, whisk egg, milk, melted butter, and vanilla until smooth.
  • Gently fold the wet ingredients into the dry. Stir just until moistened — a few lumps are fine. Overmixing can make muffins dense.
  • Gently fold in chopped apples for juicy bursts in every bite.
  • Combine flour, brown sugar, and cinnamon in a small bowl. Cut in cold butter with a pastry blender or fingertips until mixture forms coarse crumbs.
  • Divide batter evenly into muffin cups. Sprinkle streusel topping generously over each muffin.
  • Bake 18–22 minutes, or until a toothpick inserted comes out clean. Tops should be golden and slightly crisp.
  • Cool muffins in the pan for a few minutes, then transfer to a wire rack. Serve warm or at room temperature.

  • Choose the Right Apples: Firm, crisp apples like Honeycrisp, Granny Smith, or Fuji work best. They hold their shape, provide natural sweetness, and complement the warm cinnamon flavor.
