Dry Ingredients
- 1 cup old-fashioned oats
- ¾ cup all-purpose flour
- ⅓ cup light brown sugar
- ¼ tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon (optional)
Wet Ingredients
- 6 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Blueberry Filling
- 1 cup blueberries
- ¼ cup granulated sugar
- 2 tsp cornstarch
Preheat to 375°F (190°C). Line an 8-inch square pan with parchment paper.
Combine oats, flour, brown sugar, baking soda, salt, and cinnamon in a large bowl.
Stir in melted butter and vanilla until crumbly.
Press half of the oat mixture into the pan evenly.
Toss blueberries with sugar and cornstarch; spread evenly over the base.
Crumble remaining oat mixture over blueberries and lightly press. Bake 35–40 minutes until golden and bubbly.
Cool completely on a wire rack. Lift out with parchment overhang and cut into 12 bars.
