Ingredients
  

  • 2 ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ cup granulated sugar
  • cup unsalted butter
  • ¾ cup champagne
  • 6 Large egg whites
  • ½ tsp vanilla essence

Instructions
 

  • Heat your oven to 350°F (175°C). Prepare a 10-inch round pan by greasing and dusting with flour (if needed).
  • In a bowl, sift together the flour, baking powder, and salt.
  • In another large bowl, beat the sugar and butter until smooth and fluffy. Slowly pour in the champagne while mixing.
  • Whip egg whites in a clean bowl until stiff peaks form. Gently fold them into the wet mixture.
  • Slowly fold the dry ingredients into the wet mixture, being careful not to overmix.
  • Pour the batter into the prepared pan. Bake for 30–35 minutes. Check with a toothpick—if it comes out clean, it’s done
  • Let the cake cool in the pan for 15–20 minutes, then move it to a wire rack to cool completely.
