For the Brownies
- 10 tbsp Unsalted Butter
- 1 cup granulated sugar
- ⅓ cup light brown sugar (packed)
- ¾ cup + 2 tablespoons unsweetened cocoa powder
- ½ tsp vanilla extract
- 2 Large eggs
- 1 yolk eggs
- 1 tbsp corn syrup
- ⅔ cup all-purpose flour
- 1 tbsp cornstarch
- ¼ tsp fine sea salt
For the Chocolate Frosting
- ½ cup heavy cream
- 1 ½ cup semisweet chocolate chips
Topping
- Rainbow candy-coated chocolate chips or mini M&M’s
- Sprinkles or other candy toppings (optional)
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper or foil and lightly spray with cooking spray.
In a large microwave-safe bowl, melt the butter for about 90 seconds.
Add the granulated sugar, brown sugar, and cocoa powder and stir until well combined. If the mixture is very hot, allow it to cool slightly.
Mix in the vanilla extract, eggs, egg yolk, and corn syrup, stirring until the batter becomes smooth and glossy.
Add the flour, cornstarch, and salt, then gently mix until just combined. The batter will be thick.
Spread the batter evenly into the prepared pan.
Bake for about 25 minutes, or until the center is set. Allow the brownies to cool completely in the pan before adding the frosting.
Make the Chocolate Frosting
Place the heavy cream in a microwave-safe bowl and heat for about 1 minute.
Add the chocolate chips and let them sit for 3 minutes, then stir until smooth and glossy.
Pour the frosting over the cooled brownies and spread it evenly.
