Instructions
Preheat your oven to 350°F (175°C).
Spread the drained peaches evenly in a 9x13-inch baking dish.
Sprinkle ¼ cup brown sugar over the peaches. Drizzle vanilla extract and toss gently.
In a bowl, combine the cake mix, ¼ cup brown sugar, flour, salt, baking powder, cinnamon (if using), and melted butter. Mix until crumbly.
Crumble the topping mixture evenly over the peaches. Don’t press it down or stir.
Bake for 45–50 minutes until golden and bubbly.
Let cool for 15 minutes before serving. Enjoy warm, preferably with vanilla ice cream!
Storage Tips
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the microwave for 1 to 2 minutes or enjoy cold.
Notes
Peaches:
You can use fresh, canned, or even frozen peaches. Just make sure to drain the canned ones and thaw the frozen peaches before using.
Cake Mix Flavor:
Yellow cake mix is classic, but vanilla or butter pecan cake mix works great too for added depth of flavor.
Butter Tip:
Use real butter (not margarine) for the best rich flavor and golden crisp topping.
Sweetness:
If your peaches are already sweet, you can reduce the added sugar slightly.
Texture Tip:
For extra crunch, sprinkle chopped pecans or oats over the cobbler topping before baking.
Serving Suggestion:
Best served warm with a scoop of vanilla ice cream or whipped cream!
