Ingredients
  

Wet Ingredients

  • ½ cup melted butter
  • cup sour cream or Greek yogurt
  • 1 Large egg
  • 2 medium bananas, mashed
  • 1 tsp vanilla extract
  • ½ cup brown sugar
  • ¼ cup granulated sugar

Dry Ingredients

  • 2 cups all-purpose flour
  • ½ tsp salt
  • 2 ½ tsp baking powder
  • cups diced strawberries tossed in 3 Tbsp flour

For the Glaze

  • 2 tbsp mashed strawberries
  • ½ tsp vanilla extract
  • 1 cup powdered sugar

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare a 9x5-inch loaf pan with parchment paper.
  • In a large bowl, whisk butter, sour cream, egg, mashed bananas, vanilla, and sugars until smooth.
  • Fold in flour, salt, and baking powder until just combined.
  • Gently fold in diced strawberries.
  • Pour batter into pan and bake 50–55 minutes, or until a toothpick comes out clean.
  • Mix mashed strawberries, vanilla, and powdered sugar to make the glaze.
  • Cool bread 20–30 minutes, then drizzle glaze on top.
  • Cool completely before glazing to keep the glaze from melting.

Notes

  • Room temperature ingredients help batter mix smoothly
  • Toss strawberries in flour to prevent sinking
  • Don’t overmix once flour is added
  • Store in airtight container or freeze slices individually
  • Glaze is optional but adds flavor and a pretty finish
