- 240 g peanut butter (smooth, no added sugar)
- 200 g granulated sugar
- 1 Large egg
- 1 tbsp vanilla extract
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine peanut butter, sugar, egg, and vanilla extract. Mix with a spatula or spoon until fully blended.
If the dough is too soft or sticky, let it sit for 2–3 minutes. It will naturally firm up.
Scoop 1–2 tbsp of dough and roll into balls. Place them on the prepared baking sheet. Press a criss-cross pattern with a fork (greased if sticking).
Bake for 10 to 12 minutes, until cookies are lightly browned around the edges but still soft in the center.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
