Ingredients
  

  • 240 g peanut butter (smooth, no added sugar)
  • 200 g granulated sugar
  • 1 Large egg
  • 1 tbsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine peanut butter, sugar, egg, and vanilla extract. Mix with a spatula or spoon until fully blended.
  • If the dough is too soft or sticky, let it sit for 2–3 minutes. It will naturally firm up.
  • Scoop 1–2 tbsp of dough and roll into balls. Place them on the prepared baking sheet. Press a criss-cross pattern with a fork (greased if sticking).
  • Bake for 10 to 12 minutes, until cookies are lightly browned around the edges but still soft in the center.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Storage Instructions

  • Room Temperature: Store in an airtight jar or zip bag for 4–5 days
  • Freezer: Freeze in an airtight container or freezer-safe zip bag for up to 4 weeks. Cool completely before freezing.
