- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ⅓ cup honey
- ⅓ cup coconut sugar or light brown sugar
- 2 Large Eggs
- 1 cup mashed very ripe banana
- ½ cup full-fat Greek yogurt
- ¼ cup milk (cow or nut milk)
- ½ cup oil (melted coconut or mild olive oil)
- 1 cup chocolate chips
Preheat & Prepare Pan: Preheat oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
Mix Dry Ingredients: In a medium bowl, sift together flours, baking powder, salt, and cinnamon. Set aside.
Mix Wet Ingredients: In a large bowl, whisk honey, sugar, eggs, Greek yogurt, milk, and mashed bananas until smooth.
Combine Wet & Dry: Add dry mixture to wet mixture and fold gently until just combined. Avoid overmixing.
Add Oil & Chocolate Chips: Fold in melted oil, then chocolate chips, mixing gently.
Fill Muffin Cups: Divide batter evenly among muffin cups, filling to the top
Bake: Bake 18–20 minutes until lightly golden and a toothpick comes out clean or with a few moist crumbs.
Cool: Let muffins cool for 5 minutes in pan, then transfer to a wire rack. Enjoy warm or store in a covered container.
