  • 10 oz smoked sausage (Andouille or kielbasa), thinly sliced
  • 4 oz pasta (penne or rigatoni)
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup diced bell peppers (mixed colors)
  • ½ cup diced onion
  • 2 cup low-sodium chicken broth (add more if needed)
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)
  • 1 cup fresh spinach (optional)
  • Chopped parsley for garnish

Instructions
 

Prep Ingredients

  • Slice the sausage into thin rounds.
    Dice bell peppers and onions.
    Measure Cajun seasoning, cream, and Parmesan cheese.

Cook Sausage & Vegetables

  • Heat olive oil in a large skillet or pot over medium heat.
    Sauté sausage until lightly browned, then remove.
    In the same skillet, cook bell peppers and onions until tender.

Build the Base

  • Stir Cajun seasoning into the vegetables.
    Pour in chicken broth and simmer gently.

Cook the Pasta

  • Add pasta to the simmering broth.
    Stir occasionally to prevent sticking until al dente.

Make the Creamy Sauce

  • Reduce heat and stir in heavy cream until smooth.
    Gradually add Parmesan cheese, stirring until creamy.
    Return sausage to the pot and combine well.
