Ingredients
  

For the Biscuit Base

  • 100 g Digestive Biscuits or Graham Crackers
  • 3 tbsp Melted Butter

For the Cheesecake Filling

  • 200 g Full-Fat Cream Cheese (softened)
  • cup Powdered Sugar
  • 2 tbsp Pistachio Paste or finely ground pistachios
  • ½ tsp Vanilla Extract
  • 100 ml Lightly Whipped Cream

For the Raspberry Layer

  • ¾ cup Fresh or Frozen Raspberries
  • 1 tbsp Sugar or Honey
  • Optional: a few drops Lemon Juice

For Garnish (Optional)

  • Crushed Pistachios
  • Fresh Raspberries

Instructions
 

  • Prepare Raspberry Layer: Cook raspberries with sugar, blend, and strain. Let it cool completely.
  • Make Biscuit Base: Mix crushed biscuits with melted butter. Press into silicone dome molds and chill 15–20 mins.
  • Prepare Cheesecake Filling: Beat cream cheese until smooth. Add powdered sugar, pistachio paste, vanilla, and fold in whipped cream.
  • Assemble Domes: Layer cheesecake, then raspberry puree, then cheesecake again. Smooth the top.
  • Chill: Refrigerate at least 6 hours or overnight.
  • Unmold & Garnish: Carefully remove from molds. Garnish with crushed pistachios and fresh raspberries. Serve chilled.
