Ingredients
  

Brownie Batter

  • 9 tbsp unsalted butter
  • 1 ¼ cup sugar
  • ¼ cup cocoa powder
  • ½ tsp vanilla extract
  • 1 tbsp red food coloring
  • tsp salt
  • ¼ tsp espresso powder
  • ½ tsp vinegar
  • 2 Large eggs
  • ¾ cup all-purpose flour

Cheesecake Swirl

  • 9 oz cream cheese
  • 3 tbsp sugar
  • ½ tsp vanilla extract
  • 1 Egg yolk

Instructions
 

  • Preheat oven to 350°F. Grease a mini muffin pan with butter or cooking spray. Sift cocoa powder to remove lumps. Keep all ingredients at room temperature.
  • Melt butter and whisk with sugar, cocoa, vanilla, red food coloring, salt, espresso powder, and vinegar. Add eggs one at a time. Gently fold in flour until no streaks remain.
  • Beat cream cheese with sugar and vanilla until smooth. Fold in egg yolk gently avoid overmixing.
  • Spoon 1 tbsp brownie batter into each cup. Top with 1 tsp cheesecake filling, then 1 tsp brownie batter. Swirl gently with a toothpick.
  • Bake 12 minutes. Tops should spring back lightly, centers soft. Cool 5 minutes in pan, then remove to wire rack. Cool completely before serving.

Notes

  • Use room-temperature eggs & cream cheese for smooth batter.
  • Gently swirl cheesecake, don’t overmix.
  • Mini muffin pan = perfect bite-size treats.
  • Add chocolate chips, nuts, or sprinkles for fun.
  • Store in an airtight container; freezes well.
