Ingredients
  

Dough Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 Large eggs
  • 1 tsp vanilla extract
  • 3 1/3 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 2 tbsp cornstarch
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt

Cheesecake Filling

  • 4 oz cream cheese
  • tbsp granulated sugar
  • 1 tbsp sour cream
  • tsp vanilla extract

Filling & Topping

  • ½ cup strawberry jam
  • 3 oz white chocolate (optional, finely chopped)

Instructions
 

Prepare the Oven and Trays

  • Preheat oven to 350°F (175°C).
    Line two baking sheets with parchment paper.

Make the Cookie Dough

  • In a large mixing bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy using a mixer.
    Add eggs and vanilla extract. Mix until combined.
    In a separate bowl, whisk together flour, graham cracker crumbs, cornstarch, baking powder, baking soda, and salt.
    Gradually add dry mixture to the wet ingredients and mix until a thick dough forms.

Prepare the Cheesecake Filling

  • In a small bowl, mix softened cream cheese, sugar, sour cream, and vanilla until smooth and creamy.

Assemble the Cookies

  • Scoop a tablespoon of dough and flatten it slightly in your hand.
    Add 1 tsp cheesecake filling in the center, followed by 1 tsp strawberry jam.
    Fold the dough over the filling, sealing completely. Roll gently into a ball.

Add White Chocolate (Optional)

  • Press finely chopped white chocolate on top of each cookie if using.

Bake the Cookies

  • Place cookies on prepared trays about 2 inches apart.
    Bake for 10–12 minutes or until edges are golden. Centers may appear soft but will firm up as they cool.

Cool and Serve

  • Let cookies cool for 5 minutes on the tray, then transfer to a wire rack to cool completely.
