Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 Large egg
  • 1 tsp vanilla extract
  • 2 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

For the Cream Cheese Filling

  • ½ cup cream cheese
  • ¼ cup powdered sugar
  • ¼ cup strawberry jam

For the Crumble Topping

  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup butter

Optional:

  • Almond extract instead of vanilla for nutty flavor
  • Raspberry or blueberry jam instead of strawberry
  • Gluten-free flour for a gluten-free version

Instructions
 

  • Preheat Oven & Prepare Sheet: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  • Make Cookie Dough: Beat 1 cup butter and 1 cup sugar until fluffy. Add egg and vanilla. Gradually fold in flour, baking powder, and salt.
  • Prepare Cream Cheese Filling: Beat 1/2 cup cream cheese with powdered sugar. Swirl in 1/4 cup strawberry jam.
  • Shape Cookies: Flatten 1 tbsp dough rounds on the sheet, top with cream cheese mixture.
  • Add Crumble: Mix crumble ingredients and sprinkle over cookies.
  • Bake: 12–15 minutes until edges are lightly golden. Cool on a wire rack.
