Instructions
Use a fork to mash the ripe bananas until smooth.
Add egg, brown sugar, and vanilla. Stir gently until mixed.
In another bowl, mix flour and salt. Slowly add to wet mix and fold carefully.
Mix in walnuts if you like a crunchy texture.
Grease or line your loaf pan with parchment paper.
Preheat oven to 350°F (175°C). Bake for 35-40 minutes. Check doneness with a toothpick (it should come out clean).
Let bread cool for 10 minutes in the pan, then remove and cool fully on a wire rack.
Tip
Use very ripe bananas for best flavor.
Mix gently to keep the bread soft.
